Chicken Cacciatore

A delicious protein and vegetable packed mediterranean recipe

There is good evidence for the mediterranean diet, olive oil, mushrooms, and tomatoes in promoting brain health. Chicken Cacciatore is one of my favorite dishes that is packed full of goodness for your brain.

Ingredients:

  • 5 boneless skinless chicken breasts. You can substitute any type of bone and skin on chicken, such as chicken thighs. I don’t like picking out bones and skins so I prefer the former.

  • 2 packages of fresh white mushrooms or baby bellas, sliced

  • One medium sweet vidalia onion, cut in ribbons

  • 2 green bell peppers, cut in spears

  • 3 large cloves of garlic

  • 2 large cans of diced tomatoes without any added herbs or spices

  • 6 tablespoons EVOO

  • dried oregano, 1 tsp

  • dried basil, 1 tsp

  • Salt and pepper to taste

In a large microplastic-free pan brown the chicken on both sides in 3 tbsp olive oil. Add onions on top and stir over medium heat. Add peppers and stir over medium heat. Add the rest of the EVOO, mushrooms and garlic, and stir over medium heat. Add the cans of tomatoes, herbs, salt and pepper. Bring to a slow boil and reduce to low heat and cover. Cook for one hour or until the peppers are very soft and the onions are completely translucent. Roughly tear the chicken in large pieces using a serving spoon. Serve over whole grain rice or with crusty bread. Top with parmesan cheese if desired.
