Omega-3 Banana Walnut Chocolate Chip Bread Recipe
A delicious way to enhance your brain health
I try to get my Omega-3 fatty acids, which are wonderful for brain health, from dietary intake instead of from a capsule. I created this recipe for Omega-3 banana bread, which has the recommended daily amount of Omega-3 in one slice. It has three ingredients that are high in Omega-3s: ground flax seed, walnuts (7 walnuts are a daily serving of Omega-3), and Canola oil. I also cut the sugar down so the bread is not too sweet to be healthy and add dark chocolate chips (for the flavanols, optional). This bread is delicious and I have had many requests for it from friends and roommates over the years.
Ingredients
1/2 cup Canola oil
0.5 cups ground flax seed
2/3 cup sugar
1 tsp. baking soda
2 beaten eggs
1/2 tsp baking powder
3 overly ripe bananas (black spotted skin)
3 tbsp whole milk
1.5 cups flour
1/2 tsp vanilla extract
3/4 cup chopped walnuts
1/2 cup extra dark chocolate chips
1/4 cup plain whole milk yoghurt
Preheat oven to 325 degrees.
In a large bowl, beat eggs into oil and mashed bananas with a fork. Mix well but leave some banana chunks. Mix dry ingredients together separately, then add to wet. Stir in milk, vanilla, and yoghurt. Add half of the walnuts.
Rub the inside of two large metal bread pans with canola oil with a paper towel so the bread doesn’t stick to the pans. Scoop in the mixture evenly into each pan. Top the mixture with remaining walnuts.
Cook for 1 hr or when the top is brown and a knife comes out clean when you poke the middle. Serve hot with coffee.
